Ingredients
  

  • 1 green chili finely chopped
  • 1 small red bell pepper finely chopped
  • 2 green onions finely chopped
  • 1 package cream cheese 8 ounces, softened
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 teaspoon Cajun seasoning
  • 2 teaspoons salt
  • 8 flour tortillas

Method
 

  1. Start by finely chopping the green chili, red bell pepper, and green onions. Make sure to remove the seeds from the chili if you prefer less heat.
  2. In a mixing bowl, combine the softened cream cheese, sour cream, shredded cheddar cheese, Cajun seasoning, and salt. Mix thoroughly until all the ingredients are well combined.
  3. Fold in the chopped green chili, red bell pepper, and green onions into the cheese mixture. Ensure everything is evenly distributed.
  4. Take a flour tortilla and spread a generous layer of the filling over the entire surface, leaving about half an inch around the edges.
  5. Starting from one end, carefully roll the tortilla tightly until you reach the other end.
  6. Wrap each rolled tortilla in plastic wrap and refrigerate for at least 30 minutes.
  7. Once chilled, remove the plastic wrap and slice the rolls into 1-inch pieces. Arrange them on a serving platter and enjoy!
