Ingredients
  

  • 1 cup Vegetable oil (I used sunflower)
  • 1 cup Dark brown sugar
  • 1 cup Granulated sugar
  • 1 cup Applesauce (unsweetened)
  • 1 tsp Vanilla extract
  • 2+ cups All-purpose flour or GF flour blend
  • 1 Tbsp Matcha powder
  • 1 tsp Baking soda
  • 1/2 tsp Salt
  • 1 + 1/2 cups White chocolate chips

Method
 

  1. Step 1: Preheat Your Oven. Preheat your oven to 350°F (175°C). This ensures your cookies bake evenly and come out perfectly.
  2. Step 2: Mix Wet Ingredients. In a large mixing bowl, combine the sunflower oil, dark brown sugar, granulated sugar, applesauce, and vanilla extract. Using a whisk, mix until the ingredients are well combined and smooth.
  3. Step 3: Combine Dry Ingredients. In another bowl, whisk together the all-purpose flour, matcha powder, baking soda, and salt. This step is crucial as it helps distribute the baking soda and matcha evenly throughout the flour.
  4. Step 4: Combine Wet and Dry Ingredients. Gradually add the dry ingredients to the wet mixture. Stir gently with a spatula or wooden spoon until just combined. Be careful not to over-mix, as this can lead to dense cookies.
  5. Step 5: Fold in White Chocolate Chips. Gently fold in the white chocolate chips until they are evenly distributed throughout the dough.
  6. Step 6: Scoop the Dough. Using a cookie scoop or tablespoon, portion out the dough onto a baking sheet lined with parchment paper. Ensure you leave enough space between each cookie, as they will spread during baking.
