In a large skillet, heat the olive oil over medium heat. You want it hot enough to sauté without burning.
Add the diced onion, diced carrot, diced zucchini, and diced green bell pepper to the skillet. Sauté for about 5-7 minutes, or until the vegetables are tender.
Push the sautéed vegetables to the side of the skillet and add the lean ground turkey. Use your spatula to break it up as it cooks. Cook until the turkey is browned and cooked through, about 7-10 minutes.
Once the turkey is cooked, sprinkle the taco seasoning over the meat and vegetables. Pour in the water and stir everything together. Let it simmer for about 5 minutes, allowing the flavors to meld.
