How to Prepare Triple Almond Cookies
- Step 1: Preheat the oven to 350°F (175°C).
- Step 2: In a large mixing bowl, cream together the softened unsalted butter, granulated sugar, and sifted powdered sugar until light and fluffy (about 3-4 minutes).
- Step 3: Add the vegetable or canola oil and eggs, one at a time, mixing until fully blended. Then, mix in the almond extract.
- Step 4: In another bowl, whisk together the all-purpose flour, baking soda, salt, and cream of tartar.
- Step 5: Gradually mix the dry ingredients into the wet ingredients until just combined.
- Step 6: Gently fold in the sliced almonds and almond toffee bits.
- Step 7: Portion out the dough onto a parchment-lined baking sheet.
- Step 8: Roll each cookie ball in additional sugar before baking.
- Step 9: Bake for 10-12 minutes until edges are lightly golden.
- Step 10: Let cool on the baking sheet for a few minutes before transferring to a cooling rack.

- For a richer almond flavor, substitute half the butter with almond butter.
