Ingredients
  

  • 1 large egg
  • 1 cup unsalted butter softened to room temperature
  • 1 cup light brown sugar packed
  • 1 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 1.5 cups old-fashioned whole rolled oats
  • 1 cup all-purpose flour
  • 0.5 to 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 1 heaping cup semi-sweet chocolate chips
  • 0.5 cup raisins or nuts optional

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the softened unsalted butter, light brown sugar, and granulated sugar. Beat on medium speed until light and fluffy, about 2-3 minutes.
  3. Add the egg and vanilla extract to the mixture and beat until well combined.
  4. In a separate bowl, whisk together the oats, flour, cinnamon, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Gently fold in the chocolate chips and optional raisins or nuts.
  7. Using a cookie scoop or tablespoon, drop rounded balls of dough onto a prepared baking sheet, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are golden and the centers are still soft.
  9. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

  • For chewier cookies, use old-fashioned oats instead of quick oats.
  • You can freeze the dough for later baking.
  • Chill the dough for 30 minutes for thicker cookies.
