Cooking Instructions:
- Step 1: Prepare the Chicken - Season the chicken breasts with seasoned salt and ground black pepper, coating them evenly.
- Step 2: Sear the Chicken - Melt 1 tablespoon of butter over medium-high heat in a large skillet. Add the seasoned chicken breasts and sear for 5-7 minutes on each side until golden brown and cooked through (internal temperature of 165°F). Remove from skillet and set aside.
- Step 3: Sauté the Vegetables - In the same skillet, add more butter if needed. Add sliced onions and sauté for 3-4 minutes until translucent. Then add sliced mushrooms and a pinch of salt, cooking for another 5 minutes until tender.
- Step 4: Combine and Melt - Return the chicken to the skillet on top of the sautéed onions and mushrooms. Sprinkle shredded Monterey Jack cheese over the chicken. Reduce heat to low, cover, and cook for another 2-3 minutes until cheese melts.
- Step 5: Serve - Transfer the smothered chicken to plates and top with extra sautéed onions and mushrooms if desired. Enjoy!
