Ingredients

  • 1 pound beef top round trimmed and cut into ½ x 2 inch slices
  • 1 tablespoon cornstarch
For the Sauce:
  • 2 whole oranges for zest and juice
  • 1 cup low sodium chicken broth
  • 3 tablespoons low sodium soy sauce
  • ½ teaspoon red pepper flakes
  • 1 tablespoon canola oil for cooking
For the Vegetables:
  • ½ pound green beans trimmed
  • 1 medium yellow bell pepper
  • 4 stalks green onions
  • 2 tablespoons peeled, grated fresh ginger
  • 2 large garlic cloves minced
For Serving:
  • 2 cups hot cooked brown rice

Instructions
  1. Step 1: Prepare Your Ingredients - Start by zesting the two whole oranges and then juicing them into a bowl. Set aside the zest and juice separately.
  2. Step 2: Marinate the Beef - In a bowl, combine half of the orange juice, low sodium soy sauce, and cornstarch. Add in the sliced beef and toss well. Allow it to marinate for about 15-20 minutes.
  3. Step 3: Stir-Fry the Vegetables - In your wok or large skillet, heat the canola oil over medium-high heat. Add the green beans and yellow bell pepper. Stir-fry for 3-4 minutes, then add the green onions, ginger, and garlic. Cook for another 2 minutes.
  4. Step 4: Cook the Beef - Push the vegetables to the side and add the marinated beef in a single layer. Let it sear for about 2-3 minutes before stirring.
  5. Step 5: Make the Sauce - Pour in the remaining chicken broth, the rest of the orange juice, orange zest, and red pepper flakes. Stir and let the sauce thicken for about 2-3 minutes.
  6. Step 6: Serve It Up - Serve your Szechuan Orange Ginger Beef over hot cooked brown rice. Garnish with additional green onions if desired.
