Ingredients
  

For the Hummus:
  • 2 14 ounce cans chickpeas drained and rinsed
  • 2 cloves garlic peeled and crushed
  • 1 8 ounce jar sun-dried tomatoes in olive oil
  • 1 cup tahini paste
  • 1/2 cup lemon juice about 4 lemons, freshly squeezed
  • 2 tablespoons tomato paste
  • 1 teaspoon sea salt or more to taste
  • 1 1/2 teaspoons smoked paprika
  • 1/2 cup sesame oil

Method
 

Instructions:
  1. Step 1: Prepare the Ingredients. Begin by gathering all your ingredients. Drain and rinse the chickpeas thoroughly to remove any excess sodium. Peel and crush the garlic cloves, and make sure your sun-dried tomatoes are ready to go.
  2. Step 2: Combine in the Food Processor. In your food processor, add the drained chickpeas, crushed garlic, sun-dried tomatoes (along with a bit of their oil for flavor), tahini paste, lemon juice, tomato paste, sea salt, smoked paprika, and sesame oil.
  3. Step 3: Blend Until Smooth. Secure the lid on your food processor and pulse the ingredients until they are well incorporated. You may need to scrape down the sides occasionally to ensure everything is blended evenly. Continue blending until the mixture is creamy and smooth.
  4. Step 4: Taste and Adjust. After blending, taste your hummus and adjust the seasoning as needed. You can add more salt, lemon juice, or smoked paprika according to your preference.
  5. Step 5: Serve and Enjoy. Transfer the Sun-Dried Tomato Hummus to a serving bowl. Drizzle with a bit of olive oil and garnish with fresh herbs or additional sun-dried tomatoes if desired. Serve with an assortment of dippers and enjoy!
