These Subway Cookies are a delightful treat! Soft centers and crispy edges with rich white chocolate and macadamia nuts make them irresistible.

Ingredients
  

  • 1 3/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/3 cup white sugar
  • 1/2 cup brown sugar plus 2 tablespoons
  • 1/4 teaspoon salt
  • 1/3 cup oil (canola, vegetable, etc.) plus 2 tablespoons
  • 1/4 cup milk (almond milk works well)
  • 1/2 teaspoon vanilla extract
  • 1/2 cup white chocolate chips
  • 1/4 cup macadamia nuts chopped

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  3. In a large mixing bowl, combine the white sugar, brown sugar, and oil. Mix until well combined.
  4. Add the almond milk and vanilla extract to the sugar and oil mixture. Mix until smooth.
  5. Gradually add the dry ingredient mixture to the wet ingredients, stirring gently until just combined.
  6. Gently fold in the white chocolate chips and chopped macadamia nuts.
  7. Using a cookie scoop or spoon, portion out the dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes, or until the edges are lightly golden.
  9. Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack.

Notes

  • Store cookies in an airtight container at room temperature for up to a week.
  • For longer freshness, keep them in the fridge but they may lose some chewiness.
  • Freeze cookies in a single layer before transferring to a freezer bag for longer storage.
