For the Salad:
  • 6 cups leftover chicken or turkey diced into 1-inch cubes
  • 1 cup green onion thinly sliced
  • 1 cup fresh cilantro chopped
  • 1/2 cup peanuts chopped
  • 2 tablespoons fresh ginger grated
  • 1/4 cup lemon juice freshly squeezed is best
  • 2 tablespoons soy sauce or tamari for gluten-free
  • 1 tablespoon honey optional, for a touch of sweetness
  • Salt and pepper to taste
  • Leafy greens for serving, if desired

Method
 

Instructions:
  1. Start by gathering all your ingredients. Make sure your leftover chicken or turkey is diced into 1-inch cubes for even mixing. Thinly slice the green onions, chop the cilantro, and grate the fresh ginger.
  2. In a small bowl, whisk together the lemon juice, soy sauce, honey (if using), salt, and pepper. Once combined, add the grated ginger and mix well.
  3. In a large mixing bowl, combine the diced chicken, green onions, chopped cilantro, and peanuts. Pour the dressing over the salad mixture and gently toss until everything is well coated.
  4. Give your salad a taste. If you feel it needs a little more zing, add more lemon juice or soy sauce as desired.
  5. For the best flavor, let the salad chill in the refrigerator for at least 30 minutes before serving. Serve on a bed of leafy greens or enjoy it on its own!
