- Start by gathering all your ingredients. Dice the Spam into small cubes, chop the onion, and thaw the peas and carrots. Make sure your rice is cooked and ideally cold, as this will help prevent it from becoming mushy when fried.
- In a wok or large skillet, heat the sesame oil over medium-high heat. Once hot, add the chopped onion and sauté for 2-3 minutes until it becomes translucent and fragrant.
- Next, add the diced Spam to the pan. Fry for about 4-5 minutes, stirring occasionally, until the Spam is nicely browned and crispy on the edges.
- Once the Spam is ready, add the thawed peas and carrots to the skillet. Stir everything together and cook for another 2-3 minutes until the vegetables are heated through.
- Push the Spam and vegetable mixture to one side of the skillet. In the empty space, pour in the lightly beaten eggs. Scramble them gently until just set, then mix them into the rice mixture.
- Now, add the cooked rice to the skillet. Use your spatula to break up any clumps and fully incorporate the rice with the other ingredients. Drizzle the soy sauce over the rice, stirring to combine. Taste and adjust the seasoning, adding more soy sauce if desired.
- Finally, sprinkle the chopped green onions over the top of the Spam Fried Rice. Serve hot, either on its own or alongside your favorite protein for a complete meal.

- Use day-old rice for the best texture.
- Feel free to swap in seasonal veggies like bell peppers or broccoli.
- For extra flavor, add garlic or ginger while cooking.
