Ingredients
  

  • 8 ounces ground beef or turkey
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon chipotle chili powder
  • Kosher salt and pepper to taste
  • 1 can refried beans 14 ounce
  • 1 cup sour cream
  • ½ cup salsa verde
  • 1 cup freshly grated sharp cheddar cheese
  • ½ cup chopped tomatoes
  • 1 cup shredded lettuce
  • ½ cup chopped cilantro
  • 4 green onions thinly sliced
  • Pickled onions for topping
  • Tortilla chips for serving

Method
 

  1. In a large skillet over medium heat, add the ground beef or turkey. Season with ground cumin, smoked paprika, garlic powder, chipotle chili powder, kosher salt, and pepper. Cook until the meat is browned and cooked through, breaking it up with a spatula as it cooks. This should take about 5-7 minutes. Once done, remove from heat and set aside to cool slightly.
  2. In a mixing bowl, take the can of refried beans and stir until smooth. This will help in spreading the beans evenly in the dip.
  3. In your clear glass dish, start layering your ingredients. Begin with the refried beans, spreading them evenly across the bottom. Next, add the cooked meat mixture on top, spreading it out evenly.
  4. In a separate bowl, combine sour cream and salsa verde. Mix until well combined, then spread this creamy layer over the meat.
  5. Generously sprinkle the freshly grated sharp cheddar cheese over the sour cream layer, ensuring an even coverage.
  6. Now it’s time to add the fresh ingredients. Layer on the chopped tomatoes, followed by the shredded lettuce, chopped cilantro, and green onions. Finally, add pickled onions on top for an extra zing.
  7. Serve your Smoky Chipotle Layered Taco Dip with plenty of tortilla chips on the side. Make sure to get a bit of each layer in every scoop!

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Assemble the dip ahead of time but add fresh toppings just before serving.
