- In a large mixing bowl, combine the grated smoked cheddar and gouda cheeses. Add the sour cream, granulated sugar, garlic powder, and crushed red pepper.
- Using an electric mixer, or a whisk if you're up for a little workout, mix the ingredients until they are well combined and smooth. Scrape down the sides of the bowl as needed to ensure everything is evenly mixed.
- Taste the mixture and adjust the seasoning if necessary. You can add more sugar for sweetness or more crushed red pepper for heat, depending on your preference.
- Transfer the smoked cheese spread to a serving bowl and cover it with plastic wrap. Refrigerate for at least 30 minutes to allow the flavors to meld together.
