  1. Begin by grating the smoked cheddar and gouda cheeses. Using freshly grated cheese instead of pre-packaged cheese ensures a creamier texture in your spread.
  2. In a large mixing bowl, combine the grated smoked cheddar and gouda cheeses. Add the sour cream, granulated sugar, garlic powder, and crushed red pepper.
  3. Using an electric mixer, or a whisk if you're up for a little workout, mix the ingredients until they are well combined and smooth. Scrape down the sides of the bowl as needed to ensure everything is evenly mixed.
  4. Taste the mixture and adjust the seasoning if necessary. You can add more sugar for sweetness or more crushed red pepper for heat, depending on your preference.
  5. Transfer the smoked cheese spread to a serving bowl and cover it with plastic wrap. Refrigerate for at least 30 minutes to allow the flavors to meld together.
