Shrimp Scampi with Peppers and Spinach: How It’s Done
- Start by bringing a large pot of salted water to a boil. Add in 4 oz. of dry angel hair pasta and cook according to package instructions until al dente. Once cooked, drain the pasta in a colander and set aside.
- While the pasta is cooking, preheat a skillet over medium heat. Add 2 teaspoons of olive oil and allow it to warm up. Next, open the oven bag of Gorton’s Simply Bake Shrimp Classic Scampi and pour the contents into the skillet. Cook according to the package directions until the shrimp is heated through and the sauce is bubbling.
- In the same skillet, push the shrimp to one side and add 1 teaspoon of minced garlic and the sliced red bell pepper. Sauté for about 3-4 minutes until the peppers are tender-crisp. Then, add in 2 cups of fresh spinach and 1 teaspoon of salt. Stir until the spinach wilts down, mixing it with the shrimp and peppers.
- Once the vegetables are cooked, add the drained angel hair pasta to the skillet. Toss everything together to ensure the pasta is well-coated with the shrimp and the flavorful sauce. Let it cook for an additional minute to combine all the flavors.
- Remove the skillet from heat. Serve the Shrimp Scampi with Peppers and Spinach immediately, garnished with additional black pepper or a sprinkle of fresh herbs, if desired. Enjoy this vibrant dish with a side of crusty bread to soak up that delicious sauce!
