- In your large skillet, heat 2 tablespoons of neutral oil over medium heat. Add the chopped onions and cook until they are soft and translucent, about 5-7 minutes.
- Add the minced garlic and ginger to the skillet. Sauté for another minute until fragrant. Then, mix in the ground coriander, fenugreek, garam masala, cumin, paprika, salt, turmeric, cardamom, and cayenne pepper. Stir continuously for about 30 seconds to toast the spices and enhance their flavors.
- Stir in the tomato paste or puree, followed by the broth and water. Bring the mixture to a gentle simmer and let it cook for about 5 minutes, allowing the flavors to meld together.
- Add the thawed chopped spinach to the skillet. Stir until it’s well incorporated into the sauce. If you prefer a smoother texture, you can blend the spinach before adding it.
- Gently fold in the raw shrimp, ensuring they are evenly coated with the sauce. Cook for about 5-7 minutes, or until the shrimp turn pink and opaque.
- Once the shrimp are cooked through, your Shrimp Saag is ready to be served! Garnish with fresh herbs if desired and enjoy the warm, comforting flavors.
