Begin by heating a large skillet over medium heat. Add the turkey breakfast sausage links and cook until browned and cooked through, about 5-7 minutes. Break the sausage into smaller pieces as it cooks.
Once the sausage is cooked, add the sliced mushrooms to the skillet. Drizzle with olive oil if needed and sauté until the mushrooms are tender, about 5-6 minutes. Stir occasionally.
In a mixing bowl, beat the eggs until well combined and frothy. Add the cream, Spike Seasoning, and fresh-ground black pepper. Mix until incorporated.
In the baking dish, spread the cooked sausage and mushroom mixture evenly. Sprinkle crumbled feta over the top, then pour the egg mixture evenly over everything.
Preheat your oven to 350°F (175°C). Bake for 25-30 minutes, or until eggs are set and top is slightly golden. Check with a toothpick; it should come out clean.
Remove from the oven and allow to cool for a few minutes. Garnish with sliced green onions if desired. Cut into squares and serve warm.
