Preheat your oven to 350°F (175°C).
In a skillet over medium heat, cook the crumbled sausage until browned and cooked through, about 5-7 minutes. Drain excess fat and set aside.
In a large mixing bowl, combine the cubed French bread with the cooked sausage and toss gently to mix.
In another bowl, whisk together the eggs, milk, sour cream French onion dip, salt, and pepper until fully combined.
Pour the egg mixture over the bread and sausage mixture. Add in 1.5 cups of shredded Cheddar cheese and stir gently until all the bread cubes are well-coated.
Pour the combined mixture into a greased 9x13 inch baking dish and spread it out evenly with a spatula.
Sprinkle the remaining 0.5 cups of Cheddar cheese over the top of the casserole.
Bake for 35-40 minutes, or until the center is set and the top is golden brown.
Remove from the oven and let it cool for a few minutes before slicing. Serve warm and enjoy!
