Ingredients

For the Fudge:
  • 2 cups milk chocolate chips (340 grams)
  • 2/3 cup sweetened condensed milk (234 grams)
  • 1/4 cup salted butter (57 grams or 1/2 stick)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon pure vanilla extract (4 grams)
  • 1/2 cup caramel topping (160 grams)
  • Coarse ground salt (optional, for topping)

Equipment

  • Medium Saucepan
  • Wooden spoon or spatula
  • 9x9-inch Baking Pan
  • Measuring cups and spoons
  • Microwave-safe bowl

Method

Directions:
  1. Step 1: Prepare Your Baking Pan - Start by lining a 9x9-inch baking pan with parchment paper, allowing some overhang on the sides. This will make it easier to lift the fudge out later. Spray the parchment lightly with cooking spray for good measure.
  2. Step 2: Melt the Chocolate Mixture - In a medium saucepan, combine the milk chocolate chips, sweetened condensed milk, and salted butter. Heat over medium-low heat, stirring frequently, until everything is melted and smooth. Be patient; this will only take a few minutes.
  3. Step 3: Add the Spices and Flavorings - Once your mixture is smooth, remove it from the heat and stir in the ground cinnamon, kosher salt, ground nutmeg, and pure vanilla extract. Mix until fully incorporated, allowing those warm spices to infuse the fudge.
  4. Step 4: Incorporate the Caramel - Drizzle the caramel topping into the chocolate mixture and gently swirl it in with a spatula. Be careful not to overmix; you want those beautiful ribbons of caramel to remain visible.
  5. Step 5: Pour the Fudge into the Pan - Pour the fudge mixture into your prepared baking pan, using a spatula to spread it evenly. Smooth the top and, if desired, sprinkle a pinch of coarse salt on top for that finishing touch.
  6. Step 6: Chill and Set - Place the pan in the refrigerator and let the fudge set for at least 2 hours or until firm. The longer you let it chill, the easier it will be to cut.
  7. Step 7: Cut and Serve - Once set, lift the fudge out of the pan using the parchment paper overhang. Cut it into squares or rectangles, and enjoy!

Notes

  • For a smoother fudge, use high-quality chocolate chips.
  • Experiment with different types of chocolate for varied flavors.
  • Store the fudge properly in an airtight container to maintain its texture.
