Salmon Bites

Ingredients
  

  • 2 teaspoons toasted sesame oil
  • cup honey
  • cup reduced-sodium soy sauce
  • 3 cloves garlic, finely minced
  • 1 tablespoon grated ginger root
  • 1 teaspoon Sriracha (optional)
  • 1 pound salmon filet, skin removed
  • 1 tablespoon extra-virgin olive oil, canola oil, or avocado oil
  • 1 tablespoon water
  • 2 teaspoons cornstarch

  • Whisk
  • Knife and cutting board
  • Frying pan or skillet
  • Spatula

Method
 

  1. In a mixing bowl, combine the toasted sesame oil, honey, reduced-sodium soy sauce, minced garlic, grated ginger, and Sriracha (if using). Whisk together until well combined. If the mixture is too thick, add a tablespoon of water to achieve your desired consistency.
  2. Take the salmon filet and slice it into bite-sized pieces, about 1-inch cubes.
  3. In a separate bowl, toss the salmon pieces with cornstarch until they are evenly coated.
  4. Heat the olive oil in a skillet over medium-high heat. Once hot, add the salmon pieces in a single layer. Cook for about 2-3 minutes on each side until they are golden brown and cooked through.
  5. Once the salmon bites are cooked, pour the glaze over them in the skillet. Toss gently to coat each piece evenly, cooking for an additional minute until the glaze thickens slightly and becomes sticky.
  6. Remove the Salmon Bites from the heat and transfer them to a serving platter. Enjoy warm with your favorite dipping sauce or on their own.

Notes

  • For a vegan option, replace honey with maple syrup.
  • Use tamari instead of soy sauce for a gluten-free version.
  • Store leftovers in an airtight container for up to 3 days.
