Ingredients
  

  • 1 cup cottage cheese (220g)
  • 3 tablespoons cocoa powder (16g, unsweetened)
  • 2 tablespoons whey protein powder (12g)
  • 3 tablespoons allulose (30g)
  • 1 teaspoon vanilla extract

  • Blender or food processor
  • Measuring cups and spoons

Method
 

  1. Gather all your ingredients to make the process smoother.
  2. In your blender or food processor, add the cottage cheese. Blend until completely smooth.
  3. Add the cocoa powder to the blended cottage cheese and blend until well incorporated.
  4. Add the whey protein powder and blend again to thicken the pudding.
  5. Add the allulose and vanilla extract. Blend until the mixture is velvety.
  6. Taste the pudding and adjust sweetness if necessary by adding more sweetener.
  7. Transfer to a bowl or individual serving dishes and chill in the refrigerator for at least 30 minutes before serving.

Notes

  • Store in an airtight container in the refrigerator for up to 3 days.
  • If separation occurs, stir before serving.
  • For meal prep, double the recipe for easy snacks throughout the week.
