Ingredients

For the Marinade:
  • 1 dozen chicken drumsticks
  • 1 teaspoon freshly cracked or ground pepper
  • 1 tablespoon salt
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • ½ cup Worcestershire sauce (salsa inglesa)
  • ½ cup olive oil
  • 4 tablespoons smashed garlic
  • ½ cup lime juice or bitter orange juice
  • ½ cup minced parsley
  • 1 teaspoon salt (or more, to taste)
  • ½ teaspoon pepper (or more, to taste)

Equipment

  • Baking Sheet
  • Mixing bowl
  • Measuring cups and spoons
  • Whisk
  • Sharp Knife

Method

Instructions:
  1. Step 1: Prepare the Marinade - In a mixing bowl, combine the Worcestershire sauce, olive oil, smashed garlic, lime juice, parsley, salt, and pepper. Whisk everything together until well blended.
  2. Step 2: Season the Chicken - Pat the chicken drumsticks dry with paper towels. Place them in the mixing bowl with your marinade, ensuring each drumstick is well coated. Marinate in the refrigerator for at least 30 minutes, or overnight for deeper flavor.
  3. Step 3: Preheat the Oven - Preheat your oven to 400°F (200°C).
  4. Step 4: Arrange on a Baking Sheet - Line your baking sheet with foil or parchment paper. Place the marinated chicken drumsticks on the baking sheet, spacing them out evenly.
  5. Step 5: Roast the Chicken - Roast the chicken in the preheated oven for about 35-45 minutes, or until the internal temperature reaches 165°F (75°C) and the skin is crispy.
  6. Step 6: Serve and Enjoy - Once cooked, let the chicken rest for a few minutes before serving with your favorite sides.

Notes

  • For extra crispy skin, broil the chicken for the last 5 minutes of cooking.
  • Use a low-sodium Worcestershire sauce for a healthier option.
  • Add cayenne pepper to the marinade for a spicy kick.
