  • 1 tablespoon butter
  • 1 tablespoon vegetable oil

Equipment

Method

Preparation
  1. In a mixing bowl, combine the shredded cheddar cheese, softened cream cheese, diced pimentos, sliced green onions, crumbled bacon, garlic powder, and cayenne pepper. Mix until well combined.
  2. Place the chicken breasts between two pieces of plastic wrap and pound them to about 1/2 inch thick.
  3. Season both sides of the chicken breasts with salt and black pepper.
  4. Divide the pimento cheese filling evenly among the chicken breasts, fold the sides over the filling, and secure with toothpicks if necessary.
  5. In a shallow bowl, beat the egg. In another bowl, place the breadcrumbs. Dip each stuffed chicken breast into the egg, then coat with breadcrumbs.
  6. Heat the butter and vegetable oil in a skillet over medium heat and cook the stuffed chicken breasts for about 3-4 minutes on each side until golden brown.
  7. Transfer the browned chicken to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  8. Remove the chicken from the oven, let it rest for a few minutes, then serve hot.

Notes

  • For a twist, try different types of cheese in the filling.
  • Make ahead and refrigerate before baking for convenience.
  • Serve with sides like roasted vegetables or a fresh salad for a complete meal.
