Preparation
- In a mixing bowl, combine the shredded cheddar cheese, softened cream cheese, diced pimentos, sliced green onions, crumbled bacon, garlic powder, and cayenne pepper. Mix until well combined.
- Place the chicken breasts between two pieces of plastic wrap and pound them to about 1/2 inch thick.
- Season both sides of the chicken breasts with salt and black pepper.
- Divide the pimento cheese filling evenly among the chicken breasts, fold the sides over the filling, and secure with toothpicks if necessary.
- In a shallow bowl, beat the egg. In another bowl, place the breadcrumbs. Dip each stuffed chicken breast into the egg, then coat with breadcrumbs.
- Heat the butter and vegetable oil in a skillet over medium heat and cook the stuffed chicken breasts for about 3-4 minutes on each side until golden brown.
- Transfer the browned chicken to a baking dish and bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Remove the chicken from the oven, let it rest for a few minutes, then serve hot.
