Ingredients
  

  • 1/2 cup unsalted butter melted
  • 2 cups light brown sugar
  • 1/2 cup creamy peanut butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup Rolo candies unwrapped

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Line an 8x8 inch baking pan with parchment paper.
  3. In a mixing bowl, melt the unsalted butter until it’s completely liquid. Let it cool slightly.
  4. Add the light brown sugar to the melted butter and stir until well combined.
  5. Stir in the creamy peanut butter, followed by the eggs and vanilla extract.
  6. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Gradually add this dry mixture to the wet ingredients.
  7. Gently fold in the unwrapped Rolo candies.
  8. Pour the batter into the prepared baking pan and spread it evenly. Bake for about 25-30 minutes.
  9. Allow the blondies to cool in the pan for 10-15 minutes before lifting them out and slicing.

Notes

  • Try adding a pinch of cinnamon for extra flavor.
  • Don’t overbake; they should be soft in the center.
  • Store in an airtight container for up to a week.
