Ingredients

For the Smores:
  • 8 pieces Peanut Butter Cookies
  • 4 large Large Marshmallows
  • 2 pieces Peanut Butter Cups mini or regular-sized
  • 1/2 cup Chocolate Chips optional

Equipment

  • Baking Sheet
  • Parchment paper
  • Microwave-Safe Dish
  • Skewers or Sticks

Method

Instructions
  1. Start by gathering all your ingredients and equipment. Preheat your oven to 350°F if you're baking your cookies from scratch.
  2. If you’re making your cookies from scratch, combine flour, baking soda, salt, sugar, brown sugar, peanut butter, and eggs in a mixing bowl until well blended. Scoop out small dough balls and place them on a parchment-lined baking sheet. Bake for about 10-12 minutes or until golden brown. Allow them to cool slightly.
  3. Once your peanut butter cookies are ready, take one cookie and place a large marshmallow on top. Then, add a peanut butter cup or two, depending on how decadent you want it to be.
  4. If you're by a campfire, carefully roast the marshmallow on a skewer until it’s golden brown and gooey. If using an oven, place the assembled cookies on a baking sheet and broil them for about 1-2 minutes, watching closely to avoid burning.
  5. Once your marshmallows are perfectly toasted, top with another peanut butter cookie. Press down gently to allow the marshmallow to ooze out. Repeat the process for the remaining cookies.
  6. Let the Peanut Butter Cookie Smores cool for a minute before digging in. The combination of flavors will leave you craving more!

Notes

  • Ensure your peanut butter cookies are soft and chewy for the best texture.
  • Watch the marshmallows closely while toasting; they can burn quickly.
  • For longer storage, wrap leftovers tightly and freeze.
