Ingredients
  

  • 2 pcs eggs at room temperature
  • 1 cup milk at room temperature
  • 1 cup all-purpose flour
  • 1.5 tablespoons Basil and Walnut Pesto
  • 3 tablespoons grated parmesan cheese

Method
 

  1. Preheat your oven to 425°F (220°C) to create steam for rising.
  2. Lightly grease the cups of your popover pan with oil or cooking spray.
  3. In a mixing bowl, whisk together the eggs and milk until well combined. Add the flour and whisk until smooth. Gently fold in the pesto and grated parmesan cheese.
  4. Pour the batter into the prepared popover pan, filling each cup about halfway.
  5. Place the pan in the oven and bake for 20-25 minutes until puffed and golden brown.
  6. Remove from the oven, let cool slightly, and serve warm.

Notes

  • Store leftovers in an airtight container at room temperature for up to 2 days.
  • Reheat in the oven at 350°F (175°C) for 5-10 minutes to restore crispiness.
  • For longer storage, freeze baked popovers in a single layer, then transfer to a freezer bag.
