  • 1 piece chipotle pepper in adobo fine dice
  • 1 tablespoon adobo sauce from canned chipotle
  • 2-3 cloves garlic minced
  • 1/2 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • Kosher salt to taste
  • 8-12 corn tortillas or your preferred tortilla

How to Prepare Oyster Mushroom Tacos
  1. Start by heating 2 tablespoons of avocado oil in a large skillet over medium heat. Once hot, add the shredded oyster mushrooms. Sauté for about 5-7 minutes, or until they begin to soften and turn golden brown.
  2. To the skillet, add the minced garlic, diced chipotle pepper, and adobo sauce. Stir well to combine, allowing the garlic to cook for about 1 minute until fragrant.
  3. Pour in the orange juice, followed by the ground cumin, dried oregano, and kosher salt. Mix everything together and let the mixture simmer for an additional 5 minutes, allowing the flavors to meld together beautifully.
  4. While the mushroom filling is cooking, warm your corn tortillas in a separate skillet or directly over a flame for a few seconds on each side until pliable. This step enhances their flavor and makes them easier to fold.
  5. Once the filling is ready and the tortillas are warm, it’s time to assemble your Oyster Mushroom Tacos. Place a generous spoonful of the mushroom filling onto each tortilla.
  6. Top your tacos with your favorite garnishes such as dairy-free cheese, diced white onion, fresh cilantro, slices of avocado, and a drizzle of salsa or hot sauce for an extra kick.
