  • 1 teaspoon dried oregano
  • 2.2 lb chicken pieces skin on
  • 1 teaspoon salt
  • 1 tablespoon chopped fresh parsley for garnish

Method
 

Cooking Instructions:
  1. Start by mincing the garlic cloves and placing them in a mixing bowl. Add the juice and zest of the lemon, along with the orange juice. Pour in the olive oil, then sprinkle in the sweet paprika, black pepper, red pepper flakes, dried oregano, and salt. Whisk everything together until well combined, creating a vibrant marinade.
  2. Place the chicken pieces in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring that each piece is well coated. Seal the bag or cover the dish and let the chicken marinate in the refrigerator for at least 1 hour, or ideally overnight for maximum flavor.
  3. When you’re ready to cook, preheat your oven to 425°F (220°C). This high temperature will help achieve that perfect crispy skin while keeping the meat juicy.
  4. Remove the chicken from the marinade, allowing any excess to drip off. Arrange the chicken pieces skin-side up on a baking sheet or roasting pan. This positioning helps the skin to crisp up beautifully in the oven.
  5. Place the chicken in the preheated oven and bake for 35-45 minutes, or until the internal temperature reaches 165°F (75°C). If you want an extra crispy skin, you can broil the chicken for an additional 2-3 minutes at the end of cooking.
