Ingredients
  

  • 2.25 cups all-purpose flour
  • 3 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 2 large egg whites
  • 2 large egg yolks
  • 2 cups whole milk
  • 3 tablespoons vegetable oil
  • 2 teaspoons pure vanilla extract

Method
 

  1. Step 1: Prepare Your Waffle Maker - Preheat your waffle maker according to the manufacturer’s instructions.
  2. Step 2: Mix the Dry Ingredients - In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, baking soda, and kosher salt. Whisk together until well blended.
  3. Step 3: Combine the Wet Ingredients - In another bowl, whisk together the egg yolks, whole milk, vegetable oil, and pure vanilla extract until smooth.
  4. Step 4: Beat the Egg Whites - In a clean mixing bowl, use a whisk or electric mixer to beat the egg whites until soft peaks form.
  5. Step 5: Combine Wet and Dry Ingredients - Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; some lumps are okay!
  6. Step 6: Fold in the Egg Whites - Gently fold the beaten egg whites into the batter using a spatula.
  7. Step 7: Cook the Waffles - Spray the preheated waffle maker with a light coat of cooking spray. Pour the recommended amount of batter into the center and cook until golden brown, about 5 minutes.
  8. Step 8: Serve and Enjoy - Carefully remove the waffles and serve them hot with your favorite toppings.
