Ingredients
  

For the Cookie Dough Base:
  • 1.5 cups crushed Oreo cookies
  • 5 tablespoons unsalted butter melted
  • 5 tablespoons unsalted butter at room temperature
  • 1/3 cup packed brown sugar
  • 3 tablespoons granulated sugar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 3/4 cup all-purpose flour
  • 3/4 cup mini chocolate chips
For the Cream Cheese Layer:
  • 10 oz cream cheese at room temperature
  • 1/4 cup granulated sugar
  • 1 large egg at room temperature
  • 1 teaspoon vanilla extract
  • 1/4 cup crushed Oreos

Method
 

  1. Step 1: Preheat your oven to 350°F (175°C). While it’s heating up, you can prepare the crust.
  2. Step 2: In a medium bowl, combine the melted butter and brown sugar, mixing until well combined. Add in the room temperature butter, granulated sugar, salt, and vanilla extract. Mix until smooth. Gradually add in the flour and mix until just combined. Fold in the mini chocolate chips and 1 cup of crushed Oreos.
  3. Step 3: Line your 9x9 inch baking pan with parchment paper. Press approximately two-thirds of the cookie dough mixture evenly into the bottom of the pan. Set aside the remaining dough for later.
  4. Step 4: In a large mixing bowl, beat the room temperature cream cheese with an electric mixer until smooth. Add in the granulated sugar, egg, and vanilla extract. Beat until well combined and creamy.
  5. Step 5: Spread the cream cheese mixture over the cookie dough layer in the baking pan. Sprinkle the crushed Oreos on top of the cheesecake filling.
  6. Step 6: Take the reserved cookie dough and crumble it over the cheesecake layer, ensuring an even distribution.
  7. Step 7: Bake in the preheated oven for 30-35 minutes, or until the edges are golden and the center is set. The cheesecake should be slightly jiggly but not wet.
  8. Step 8: Once baked, let the bars cool in the pan for about 10 minutes before transferring them to the refrigerator to cool completely. Once chilled, slice into squares and serve.
