Step 3: Line your 9x9 inch baking pan with parchment paper. Press approximately two-thirds of the cookie dough mixture evenly into the bottom of the pan. Set aside the remaining dough for later.
Step 4: In a large mixing bowl, beat the room temperature cream cheese with an electric mixer until smooth. Add in the granulated sugar, egg, and vanilla extract. Beat until well combined and creamy.
Step 5: Spread the cream cheese mixture over the cookie dough layer in the baking pan. Sprinkle the crushed Oreos on top of the cheesecake filling.
Step 6: Take the reserved cookie dough and crumble it over the cheesecake layer, ensuring an even distribution.
Step 7: Bake in the preheated oven for 30-35 minutes, or until the edges are golden and the center is set. The cheesecake should be slightly jiggly but not wet.
Step 8: Once baked, let the bars cool in the pan for about 10 minutes before transferring them to the refrigerator to cool completely. Once chilled, slice into squares and serve.
