  • 8 oz frozen whipped topping thawed
  • 3 oz orange gelatin mix just the powder
  • 16 oz 4% fat cottage cheese small or large curd will work
  • 14 oz mandarin oranges drained
  • 1 cup mini marshmallows

Method
 

  1. In a large mixing bowl, combine the thawed frozen whipped topping and the cottage cheese. Use a spatula to gently fold them together until well blended.
  2. Sprinkle the orange gelatin mix over the whipped topping and cottage cheese mixture. Gently fold it in until the powder is fully incorporated.
  3. Carefully fold in the drained mandarin oranges, ensuring they are evenly distributed throughout the mixture.
  4. Add the mini marshmallows to the bowl and fold them in as well.
  5. Cover the bowl with plastic wrap or transfer the salad to a serving dish and chill in the refrigerator for at least 2 hours before serving.

Notes

  • This salad can be made vegan by using plant-based whipped topping and cottage cheese.
  • For added texture, consider mixing in chopped fresh fruits like pineapple or strawberries.
