  • 2 tsp half and half
  • to taste Spike seasoning
  • 3 oz mushrooms washed and cut into thick slices
  • 2 tsp olive oil for cooking mushrooms
  • 2 oz goat cheese crumbled
  • Thinly sliced green onions for garnish (optional)

Method
 

Instructions
  1. Wash your mushrooms thoroughly. Cut them into thick slices and set them aside.
  2. In a mixing bowl, crack the 3 eggs and add 2 tsp. of half and half. Season with Spike seasoning to taste and beat until well combined.
  3. Heat a non-stick skillet over medium heat and add 2 tsp. of olive oil. Once hot, add the sliced mushrooms and sauté for about 5-7 minutes until tender and golden brown.
  4. Pour the beaten egg mixture into the skillet over the mushrooms. Cook undisturbed for about 2-3 minutes until the edges start to set.
  5. Sprinkle the crumbled goat cheese over one half of the omelet and let it melt slightly.
  6. Fold the other half of the omelet over the cheese and cook for another minute. Slide onto a plate and garnish with green onions if desired.
