- Wash your mushrooms thoroughly. Cut them into thick slices and set them aside.
- In a mixing bowl, crack the 3 eggs and add 2 tsp. of half and half. Season with Spike seasoning to taste and beat until well combined.
- Heat a non-stick skillet over medium heat and add 2 tsp. of olive oil. Once hot, add the sliced mushrooms and sauté for about 5-7 minutes until tender and golden brown.
- Pour the beaten egg mixture into the skillet over the mushrooms. Cook undisturbed for about 2-3 minutes until the edges start to set.
- Sprinkle the crumbled goat cheese over one half of the omelet and let it melt slightly.
- Fold the other half of the omelet over the cheese and cook for another minute. Slide onto a plate and garnish with green onions if desired.
