No-Bake Samoas Cookie Granola Bars

These No-Bake Samoas Cookie Granola Bars are a delicious, guilt-free treat packed with coconut and oats!

Ingredients
  

  • 1 cup coconut oil melted or in liquid state
  • 1 cup light corn syrup (or honey, brown rice syrup, or yacon syrup for a vegan option)
  • 1 cup granulated sugar
  • 1 cup light brown sugar packed
  • 3 cups sweetened shredded coconut
  • 2 ½ cups quick-cook oats (use Certified Gluten Free Quick Cooking Oats)
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • Pinch salt optional and to taste
  • ½ cup semi-sweet chocolate chips melted for drizzling (optional)

  • 9x13 inch baking pan
  • Parchment paper

  • Double boiler or microwave-safe bowl

Method
 

  1. Start by lining a 9x13 inch baking pan with parchment paper. This will help you easily lift out the bars once they have set.
  2. In a large mixing bowl, combine the melted coconut oil, light corn syrup, granulated sugar, and light brown sugar. Stir until everything is well combined and the sugars have dissolved.
  3. Now, add the sweetened shredded coconut, quick-cook oats, cinnamon, vanilla extract, and a pinch of salt (if using). Mix everything together until all the dry ingredients are well coated with the wet mixture.
  4. Transfer the mixture into the prepared baking pan. Using a spatula, press the mixture down firmly and evenly. This helps the bars hold together once they have set.
  5. Place the pan in the refrigerator for at least 2 hours, or until the mixture is firm enough to cut into bars.
  6. If you’re adding a chocolate drizzle, melt the semi-sweet chocolate chips using a double boiler or microwave. Once melted, drizzle the chocolate over the set granola bars. Return the pan to the refrigerator for an additional 30 minutes to allow the chocolate to harden.

Notes

  • Store bars in an airtight container in the refrigerator for up to a week.
  • Freeze individual bars wrapped in plastic for up to three months.
  • Ensure to use Certified Gluten Free oats for gluten-free options.
