Instructions
  1. Step 1: Prepare the Dates - Start by pitting the dates if they aren’t already pitted. Place them in a food processor and pulse until they form a sticky paste. If your dates are a bit dry, add a splash of water to help them blend.
  2. Step 2: Mix the Ingredients - In a mixing bowl, combine the date paste, almond meal, grated coconut, minced almonds, and dark chocolate chips. Use a rubber spatula to mix everything until well combined.
  3. Step 3: Shape the Cookies - Using your hands, take small portions of the mixture and roll them into balls or shape them into flat cookies. Place each cookie on a lined cookie sheet.
  4. Step 4: Chill and Set - Once all cookies are shaped, place the cookie sheet in the refrigerator for at least 30 minutes. This will help them firm up and hold their shape.
  5. Step 5: Enjoy! - After chilling, your No-Bake Almond Joy Cookies are ready to enjoy! Store any leftovers in an airtight container in the fridge to keep them fresh.

Notes
