Ingredients
  

  • 1 cup mashed sweet potato (cooked and mashed)
  • 2/3 cup milk of choice (almond, coconut, or oat milk)
  • 2 tbsp cocoa powder (for rich chocolate flavor)
  • 2 tbsp pure maple syrup (or sweetener of choice; alternatively, use 1 ripe banana)
  • 1/8 tsp salt (to enhance sweetness)
  • 3 tbsp almond butter (optional, for added creaminess and flavor)

Method
 

  1. Start by cooking your sweet potatoes until they are fork-tender, about 15-20 minutes of boiling. Once cooked, drain and mash in a bowl until smooth.
  2. In your blender or food processor, combine the mashed sweet potato, milk of choice, cocoa powder, maple syrup, salt, and almond butter (if using). Blend until smooth and creamy.
  3. Taste your Nice Cream! Adjust the sweetness by adding more maple syrup or cocoa powder if desired.
  4. Transfer the mixture into a freezer-safe container. Smooth the top, cover tightly, and place in the freezer for at least 2-3 hours, or until firm.
  5. Once frozen to your desired consistency, scoop into bowls and enjoy! Top with your favorite toppings like nuts, coconut flakes, or fresh fruits.
