Ingredients
  

For the Crust:
  • 1 cup cracker crumbs (savory crackers like Ritz or saltines)
  • 4 tablespoons salted butter (melted)
  • 1 egg white
For the Filling:
  • 1 cup cream cheese (room temperature)
  • 1 cup sour cream
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon lemon zest
  • 1 tablespoon minced fresh chive
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 4 tablespoons salmon roe caviar (for topping)

Method
 

Instructions:
  1. 1. In a medium mixing bowl, combine the cracker crumbs, melted butter, and egg white. Press into the mini cheesecake pan and bake at 350°F for 8-10 minutes. Let cool.
  2. 2. In a large bowl, beat the cream cheese until smooth. Add sour cream, lemon juice, lemon zest, chive, salt, and pepper. Mix until creamy.
  3. 3. Spoon the cheesecake filling over the cooled crusts and smooth the tops.
  4. 4. Bake at 325°F for 20-25 minutes until set but slightly jiggly. Cool completely and refrigerate for at least 2 hours.
  5. 5. Top with caviar and extra chives before serving.
