Ingredients
  

  • 3 pieces Yukon Gold potatoes rinsed and dried
  • 1.5 tbsp brown sugar
  • 1 tbsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 0.5 tsp chili powder
  • 1 tsp kosher salt
  • 1/8 tsp ground mustard
  • 1 pinch cayenne (optional)

  • Sharp knife or mandoline
  • Mixing bowl
  • Paper towels

Method
 

  1. Start by rinsing and drying your Yukon Gold potatoes thoroughly. Slice the potatoes as thinly as possible, ideally about 1/8 inch thick.
  2. In a mixing bowl, combine the brown sugar, smoked paprika, onion powder, garlic powder, chili powder, kosher salt, ground mustard, and cayenne (if using). Stir well.
  3. Add the potato slices to your bowl of seasoning. Toss them gently until each slice is evenly coated with the spice mixture.
  4. Line a microwave-safe plate with the seasoned potato slices in a single layer. Avoid overlapping the slices.
  5. Microwave the potato slices on high for about 5 to 7 minutes, checking frequently until they are golden brown and crisp.
  6. Once done, remove them from the microwave and let them cool for a few minutes before enjoying.

Notes

  • For maximum crispiness, ensure potatoes are sliced as thinly as possible.
  • Store any leftovers in an airtight container at room temperature for up to 3 days.
