Start by rinsing and drying your Yukon Gold potatoes thoroughly. Slice the potatoes as thinly as possible, ideally about 1/8 inch thick.
In a mixing bowl, combine the brown sugar, smoked paprika, onion powder, garlic powder, chili powder, kosher salt, ground mustard, and cayenne (if using). Stir well.
Add the potato slices to your bowl of seasoning. Toss them gently until each slice is evenly coated with the spice mixture.
Line a microwave-safe plate with the seasoned potato slices in a single layer. Avoid overlapping the slices.
Microwave the potato slices on high for about 5 to 7 minutes, checking frequently until they are golden brown and crisp.
Once done, remove them from the microwave and let them cool for a few minutes before enjoying.
