Ingredients
  

  • 1 lb chicken breast cubed
  • 2 tablespoons taco seasoning
  • 1 can (15 oz) black beans drained and rinsed
  • 1 can (15 oz) corn drained
  • 1/2 cup salsa
  • 1/2 cup water
  • 1 cup shredded cheese
  • 2 cups crushed tortilla chips
  • Chopped green onions optional for serving

Method
 

  1. Step 1: Preheat the oven to 350°F (175°C) to ensure even baking.
  2. Step 2: In a large mixing bowl, combine the cubed chicken breast and taco seasoning, ensuring the chicken is evenly coated.
  3. Step 3: Add the drained black beans, drained corn, salsa, and water to the bowl with the chicken. Stir until well combined.
  4. Step 4: Pour the chicken mixture into a 9x13 inch baking dish, spreading it out evenly.
  5. Step 5: Sprinkle shredded cheese over the top, followed by crushed tortilla chips.
