Ingredients
  

For the Bake:
  • 2 pounds chicken breast boneless and skinless
  • 1 ounce taco seasoning one package
  • 1 cup salsa your favorite brand
  • 2 cups frozen peppers and onion mix or fresh, with 1/2 onion sliced and 1 bell pepper sliced
  • 1 can black beans drained and rinsed
  • 1 cup shredded sharp cheddar cheese for topping

Equipment

  • Mixing bowl

Method
 

Instructions:
  1. Preheat your oven to 375°F (190°C).
  2. Place the chicken breasts in a large mixing bowl. Sprinkle the taco seasoning evenly over the chicken and toss to coat each piece thoroughly.
  3. In your baking dish, spread the seasoned chicken breasts in a single layer. Pour the salsa over the chicken, ensuring each piece is coated. Next, add the frozen peppers and onions evenly on top.
  4. Sprinkle the drained and rinsed black beans over the mixture.
  5. Finally, sprinkle the shredded sharp cheddar cheese on top.
  6. Cover the baking dish with aluminum foil and place it in the preheated oven. Bake for 25 minutes, then remove the foil and bake for an additional 15 minutes, or until the chicken is fully cooked and the cheese is bubbly and golden.
