Mexican Beefy Nacho Casserole

Ingredients
  

  • 1 lb 90% lean ground beef
  • 1/2 cup salsa your preferred
  • 4 scallions white and green parts chopped and separated
  • 1 clove garlic chopped
  • 2 15 oz cans white beans or a combination of black and pinto beans
  • 1 cup chicken broth
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cumin
  • 1/4 teaspoon paprika
  • 12 oz Doritos chips or restaurant-style tortilla chips
  • 3 cups pepper Jack cheese or cheddar, or a combination of both
  • Green scallions, chopped tomatoes, sour cream, and lime for serving

Method
 

  1. In a large skillet over medium heat, add the ground beef. Cook until browned, about 5-7 minutes, breaking it up with a spatula as it cooks. Drain any excess fat.
  2. Add the chopped garlic and the white parts of the scallions to the skillet. Cook for an additional 2-3 minutes until the garlic is fragrant.
  3. Stir in the white beans, salsa, chicken broth, chili powder, cumin, and paprika. Let the mixture simmer for about 5 minutes, allowing the flavors to meld.
  4. Preheat your oven to 350°F (175°C). In the casserole dish, layer half of the Doritos chips evenly on the bottom. Pour half of the beef mixture over the chips, followed by a layer of cheese. Repeat the layers with the remaining chips, beef mixture, and top with the rest of the cheese.
  5. Place the casserole in the preheated oven and bake for 20-25 minutes, or until the cheese is bubbly and golden.
  6. Remove the casserole from the oven and let it cool for a few minutes. Top with chopped green scallions, diced tomatoes, and a dollop of sour cream. Serve with lime wedges on the side for an extra burst of flavor.
