- In a small bowl, mix the mayonnaise and Sriracha. Adjust the amount of Sriracha to your spice preference.
- Carefully cut the avocado in half, remove the pit, and scoop the flesh out with a spoon. Slice the avocado into thin pieces and set them aside.
- For added texture, you may toast the hearty wheat bread until golden brown. This step is optional.
- Spread a generous amount of basil pesto on one slice of the bread and the spicy mayo on the other.
- On the pesto side, layer the baby spinach, sliced avocado, thin strips of red onion, crumbled feta cheese, slices of tomato, and roasted red bell pepper.
- Sprinkle a pinch of salt and pepper over the veggies to enhance their flavors.
- Place the second slice of bread, mayo side down, on top of your delicious layers. Press down gently to hold everything together.
