Ingredients
  

For the Salmon:
  • 1 2-pound salmon fillet
  • 1/4 tsp sea salt to taste
  • 1 tsp paprika
  • 1 tsp ground ginger or garlic powder
  • 1 tsp dried dill
  • 1/4 cup kalamata olives pitted and chopped
  • 1/4 cup sun-dried tomatoes drained
  • 1/2 cup artichoke hearts
  • 1/4 cup capers
  • 3 sprigs fresh dill chopped
  • 1/3 cup pesto sauce

Equipment

  • Parchment paper
  • Large baking sheet
  • Mixing bowl
  • Sharp Knife
  • Measuring cups and spoons

Method
 

Directions:
  1. Preheat your oven to 400°F (200°C).
  2. Cut two large pieces of parchment paper, approximately 15 inches long.
  3. Place the salmon fillet in the center of the parchment paper. Sprinkle with sea salt, paprika, ground ginger or garlic powder, and dried dill.
  4. Evenly distribute the kalamata olives, sun-dried tomatoes, artichoke hearts, capers, and chopped fresh dill on top of the salmon.
  5. Pour the pesto sauce over the salmon and toppings.
  6. Fold the parchment paper over the salmon, creating a half-moon shape, and seal the packet tightly.
  7. Place the parchment packets on a baking sheet and bake for 15-20 minutes.
  8. Carefully open the packets and transfer the salmon to a serving plate.
