Start by cooking your rice. If you’re using turmeric rice, rinse 1 cup of rice under cold water. Combine it with 2 cups of water and a pinch of salt in a rice cooker or pot. Cook according to the rice cooker instructions or bring to a boil, then reduce to a simmer and cover until tender, about 15-20 minutes.
While the rice is cooking, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add 1/4 cup of finely diced onion and sauté for about 3-4 minutes until the onion is translucent. Stir in 4 cloves of minced garlic and cook for another minute until fragrant.
Add 1 pound of ground lamb to the skillet. Use a spatula to break it up as it browns. Sprinkle in 1 teaspoon of paprika, 1 teaspoon of allspice, 1/2 teaspoon of red pepper flakes, 1/4 teaspoon of ground ginger, and season with salt and pepper to taste. Cook until the lamb is browned and cooked through, about 5-7 minutes.
Once the lamb is cooked, stir in 1/4 cup of chopped fresh mint and 1/4 cup of chopped flat leaf parsley. This will add a burst of freshness to your spiced lamb.
In each serving bowl, layer the following: a scoop of turmeric rice, a generous portion of the spiced ground lamb, and top with diced tomato and cucumber. Add a dollop of hummus and sprinkle with feta cheese. Garnish with additional mint and parsley for a beautiful presentation.
