Ingredients
  

  • 1 pound ground lamb
  • 1 tablespoon olive oil
  • 1/4 cup finely diced onion
  • 4 cloves garlic finely minced
  • 1 teaspoon paprika
  • 1 teaspoon allspice
  • 1/2 teaspoon red pepper flakes
  • 1/4 teaspoon ground ginger
  • Salt to taste
  • Pepper to taste
  • 1/4 cup fresh mint chopped plus more for garnish
  • 1/4 cup flat leaf parsley chopped plus more for garnish
  • 1 cup Turmeric Rice or other rice of choice
  • 1 each tomato diced
  • 1 each cucumber peeled and diced
  • 1 cup hummus (homemade or store bought)
  • 1 cup feta cheese
  • 2 each pita bread (optional, for serving)

Method
 

  1. Start by cooking your rice. If you’re using turmeric rice, rinse 1 cup of rice under cold water. Combine it with 2 cups of water and a pinch of salt in a rice cooker or pot. Cook according to the rice cooker instructions or bring to a boil, then reduce to a simmer and cover until tender, about 15-20 minutes.
  2. While the rice is cooking, heat 1 tablespoon of olive oil in a large skillet over medium heat. Add 1/4 cup of finely diced onion and sauté for about 3-4 minutes until the onion is translucent. Stir in 4 cloves of minced garlic and cook for another minute until fragrant.
  3. Add 1 pound of ground lamb to the skillet. Use a spatula to break it up as it browns. Sprinkle in 1 teaspoon of paprika, 1 teaspoon of allspice, 1/2 teaspoon of red pepper flakes, 1/4 teaspoon of ground ginger, and season with salt and pepper to taste. Cook until the lamb is browned and cooked through, about 5-7 minutes.
  4. Once the lamb is cooked, stir in 1/4 cup of chopped fresh mint and 1/4 cup of chopped flat leaf parsley. This will add a burst of freshness to your spiced lamb.
  5. In each serving bowl, layer the following: a scoop of turmeric rice, a generous portion of the spiced ground lamb, and top with diced tomato and cucumber. Add a dollop of hummus and sprinkle with feta cheese. Garnish with additional mint and parsley for a beautiful presentation.
  6. If desired, warm the pita bread in a dry skillet for a minute on each side. Serve it alongside your Mediterranean Lamb Bowls for a perfect complement.

Notes

  • Store leftover components separately in airtight containers in the fridge for up to 3 days.
  • Reheat the lamb gently on the stovetop or in the microwave, adding a splash of water to retain moisture.
