Ingredients
  

  • 1 tablespoon olive oil for sautéing and adding richness
  • 1/4 cup red onion minced
  • 2 cloves garlic minced
  • 2 cups brown rice cooked
  • 2 Roma tomatoes diced small
  • 2 cups baby spinach fresh
  • 1/2 cup fat-free feta cheese crumbled

Method
 

  1. In a large skillet, heat the olive oil over medium heat. Once hot, add the minced red onion and cook for about 2-3 minutes, or until it becomes translucent. Next, add the minced garlic and sauté for an additional 1-2 minutes until fragrant.
  2. Stir in the cooked brown rice and mix well, ensuring that the rice is heated through. Add the diced Roma tomatoes and cook for another 3-4 minutes, allowing the tomatoes to soften and release their juices.
  3. Gradually add the fresh baby spinach to the skillet, stirring constantly until the spinach wilts down, about 2 minutes.
  4. Remove the skillet from heat and fold in the crumbled feta cheese. The warmth from the rice will slightly melt the cheese, creating a creamy texture.
  5. Spoon the Mediterranean Fried Rice into bowls and enjoy it warm.

Notes

  • Feel free to use leftover rice for this recipe; day-old rice works wonderfully.
  • If you prefer a bit of spice, add a pinch of red pepper flakes when sautéing the onions.
  • This dish is versatile and can be enjoyed warm or cold, making it perfect for meal prep.
