Ingredients
  

  • 1 lb ground chicken or ground turkey
  • 1/4 cup whole wheat panko breadcrumbs
  • 1 large egg
  • 1/3 cup sun-dried tomatoes, packed in oil, chopped
  • 1/4 cup feta cheese
  • 1/4 cup parmesan cheese
  • 2 cloves garlic, minced or 1/2 teaspoon garlic powder
  • 1/4 cup green onions, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 squeeze lemon optional

Method
 

  1. Preheat your oven to 400°F (200°C) for even cooking and a golden color.
  2. In a large mixing bowl, combine ground chicken or turkey, breadcrumbs, egg, sun-dried tomatoes, feta, parmesan, garlic, green onions, parsley, salt, and pepper.
  3. Mix all ingredients until just combined; avoid overmixing to keep meatballs tender.
  4. Using a cookie scoop or hands, portion mixture into 1 to 1.5-inch meatballs and place on a lined baking sheet.
  5. Bake for 20-25 minutes until golden brown and internal temperature reaches 165°F (75°C).
  6. Remove from oven and let cool for a few minutes before serving, optionally with a squeeze of lemon on top.

Notes

  • These meatballs are great for meal prep and can be stored in the fridge for up to 4 days.
  • Freeze uncooked or cooked meatballs for up to 3 months; thaw before reheating.
  • Experiment with different herbs like basil or oregano for a unique flavor.
