Ingredients

  • 1 cup plain Greek yogurt for a creamy base that’s high in protein
  • 1 cup milk of choice I personally love using Fairlife for its rich texture
  • 1 tablespoon pure maple syrup to add a touch of natural sweetness
  • 2 tablespoons chia seeds for that delightful pudding texture and added nutrition
  • 1 teaspoon matcha powder the star ingredient that brings flavor and health benefits
  • ½ teaspoon vanilla extract to enhance the overall flavor profile
  • Vanilla Greek yogurt optional, for layering or topping your pudding
  • Additional matcha powder for dusting the top before serving

Equipment

  • Mixing bowl
  • Whisk or spoon
  • Measuring cups and spoons
  • Container or jars
  • Refrigerator

Method

  1. In a mixing bowl, whisk together the plain Greek yogurt, milk, pure maple syrup, chia seeds, matcha powder, and vanilla extract until well combined. The vibrant green color of the matcha will brighten up your mixture!
  2. Ensure that the chia seeds are evenly distributed throughout the mixture. This will help them absorb the liquid properly and create that perfect pudding texture.
  3. Transfer the mixture to a container or individual jars, then cover and refrigerate for at least 2-3 hours, or preferably overnight. This is the crucial step where the chia seeds will swell and thicken the mixture into a delightful pudding.
  4. Once your pudding has thickened, give it a gentle stir before serving. If desired, layer with vanilla Greek yogurt for added creaminess and flavor. Dust the top with additional matcha powder for an eye-catching finish. Serve chilled and enjoy!

Notes

  • Store the pudding in an airtight container in the refrigerator for up to 5 days.
  • If layered with yogurt or toppings, consume within 2 days for optimal freshness.
  • For meal prep, divide the pudding into individual jars for easy grab-and-go options throughout the week.
