Maple Balsamic Dressing (Oil-Free!)

Ingredients
  

For the Dressing:
  • 1/4 cup Balsamic Vinegar
  • 2 tablespoons Pure Maple Syrup
  • 2 tablespoons Water
  • 2 teaspoons Chia Seeds
  • 1 teaspoon Dijon Mustard
  • 1 clove Garlic minced
  • 1/2 teaspoon White Miso
  • 1 teaspoon Italian Seasoning
  • 1 teaspoon Fresh Rosemary optional

Equipment

  • Measuring cups and spoons
  • Blender or Whisk
  • Jar or Bottle
  • Garlic Press (optional)

Method
 

Directions:
  1. Start by measuring out all the ingredients: balsamic vinegar, maple syrup, water, chia seeds, Dijon mustard, minced garlic, white miso, and Italian seasoning. If using, have your fresh rosemary ready as well.
  2. In a blender, combine the balsamic vinegar, maple syrup, water, chia seeds, Dijon mustard, minced garlic, white miso, and Italian seasoning. If adding rosemary, toss it in now.
  3. Blend the mixture on high until it’s smooth and well-combined. This should take about 30 seconds to a minute.
  4. Pour the dressing into a jar or bottle and let it sit for about 10-15 minutes. This allows the chia seeds to absorb some liquid and thicken the dressing.
  5. Once the dressing has thickened, you can use it immediately or store it in the refrigerator for later.

Notes

  • Store in the refrigerator for up to a week; shake well before using.
  • Make a double batch for meal prep and enjoy it throughout the week.
  • If too thick, thin with a little water before serving.
