In a large skillet over medium heat, add the ground beef, diced onion, and minced garlic. Cook until the beef is browned and the onions are translucent, about 7-10 minutes.
Once the beef is thoroughly cooked, drain any excess fat. Return the skillet to the heat and stir in the seasoned salt and black pepper.
Reduce the heat to low and add the softened cream cheese and diced pickled jalapeños to the skillet. Stir until the cream cheese is fully melted.
Remove the skillet from the heat and add 1 cup of the shredded mild cheddar cheese to the beef mixture. Stir until the cheese is melted.
Preheat your oven to 350°F (175°C). Slice the Hawaiian sweet rolls in half horizontally, keeping them connected.
Evenly distribute the beef and cheese mixture over the bottom half of the rolls. Sprinkle the remaining cup of shredded cheddar cheese on top.
In a small bowl, mix the melted butter with garlic powder and brush this mixture evenly over the tops of the rolls. Sprinkle the sesame seeds on top.
Cover the baking dish with aluminum foil and bake for 15 minutes. Remove the foil and bake for an additional 5-10 minutes, or until golden brown.
