Ingredients
  

For the Totchos:
  • 32 ounces frozen tater tots (1 bag)
  • 2 tablespoons taco seasoning (divided)
  • 1 tablespoon olive oil
  • 1 pound 90% lean ground beef
  • 1 white onion (diced)
  • 1 clove garlic (minced)
  • 8 ounces freshly shredded Colby jack cheese
  • Pico de gallo
  • Sour cream
  • Guacamole
  • Sliced green onions
  • Chopped fresh cilantro
  • Diced jalapeño peppers

Method
 

Cooking Instructions:
  1. Step 1: Preheat your oven according to the instructions on the bag of frozen tater tots. Spread the tots in a single layer on a baking sheet and bake until they are golden brown and crispy, typically around 20-25 minutes.
  2. Step 2: While the tater tots are baking, heat the olive oil in a large skillet over medium heat. Add the diced onion and cook until softened, about 3-4 minutes. Then, add the minced garlic and stir for another minute until fragrant.
  3. Step 3: Add the ground beef to the skillet, breaking it apart with a spatula. Sprinkle with 1 tablespoon of taco seasoning and cook until the beef is browned and cooked through, about 6-8 minutes. Stir occasionally to ensure even cooking.
  4. Step 4: Once the tater tots are done baking, remove them from the oven and sprinkle the remaining 1 tablespoon of taco seasoning over the hot tater tots. Gently toss to coat.
  5. Step 5: On a large serving platter, layer the crispy tater tots with the seasoned ground beef. Sprinkle the freshly shredded Colby jack cheese generously over the top.
  6. Step 6: Return the assembled platter to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.
  7. Step 7: Once out of the oven, top your Loaded Tater Tots (Totchos) with pico de gallo, a dollop of sour cream, guacamole, sliced green onions, chopped cilantro, and diced jalapeño peppers for an extra kick.

Notes

  • Use freshly shredded cheese for the best melt.
  • Allow tater tots to bake until crispy to avoid sogginess.
  • Start with less taco seasoning and adjust according to taste.
