Ingredients
  

  • 8 ounces unsalted butter (softened)
  • 8 ounces cream cheese (softened)
  • 5 cups powdered sugar
  • 1 lemon zest (about 2 tablespoons)
  • 1 tablespoon fresh lemon juice

Method
 

  1. Begin by ensuring your unsalted butter and cream cheese are softened. Leave them out at room temperature for about 30 minutes before you start.
  2. In your mixing bowl, beat the softened butter and cream cheese together using your mixer. Start on a low speed to combine, then increase to medium speed until the mixture is light and fluffy, about 2-3 minutes.
  3. Once your butter and cream cheese are fluffy, add the zest of one lemon and the tablespoon of fresh lemon juice. Beat again for another minute until fully incorporated.
  4. Slowly add the powdered sugar, one cup at a time, mixing on low speed to prevent a sugar cloud! Once all the sugar is added, increase the speed to medium and beat until smooth and creamy.
  5. Give your frosting a taste. If you want a stronger lemon flavor, feel free to add a touch more lemon zest or juice, adjusting it to your preference.
  6. Once you’re happy with the flavor and consistency, it’s time to frost your cakes or cupcakes. Use your spatula to spread it generously or pipe it on for a decorative touch.
