Ingredients
  

  • 2.5 lbs Yukon Gold potatoes cut into 1-inch pieces
  • 1/3 cup olive oil
  • 1.5 tsp dried oregano (feel free to experiment with dill or basil)
  • Salt and freshly ground black pepper to taste
  • 1/4 cup fresh lemon juice
  • 1 Tbsp minced garlic
  • 3 Tbsp minced fresh parsley for garnish

Method
 

  1. Preheat your oven to 425°F (220°C). A hot oven is key to achieving that crispy exterior on your potatoes.
  2. Wash and peel (if desired) the Yukon Gold potatoes. Cut them into 1-inch pieces, ensuring they are roughly the same size for even cooking.
  3. In a large mixing bowl, whisk together the olive oil, dried oregano, salt, pepper, fresh lemon juice, and minced garlic until well combined.
  4. Add the potato pieces to the bowl with the marinade. Toss them gently until all the potatoes are evenly coated in the mixture.
  5. Spread the coated potatoes in a single layer on a large sheet pan. Make sure they are not overcrowded; this ensures they roast instead of steam.
  6. Place the baking sheet in the preheated oven and roast for about 30-35 minutes. Toss the potatoes halfway through to ensure they brown evenly.
  7. Once the potatoes are golden brown and crispy, remove them from the oven. Sprinkle with freshly minced parsley for a pop of color and flavor.
  8. Transfer the Lemon Roasted Potatoes to a serving dish and enjoy them hot, as a perfect side to your favorite main course!
